Here are some TOP fast/healthy food recipes. Any time of year or day :) Use whatever vegetables you have and like.

 

Wash, chop, mix with spices, a pinch of salt, a drizzle of oil.

I used: broccoli, cauliflower, bell pepper, tomatoes, carrots, mushrooms, zucchini, peas with pods. For spices, I used an Italian herb mix - basil, oregano, marjoram.

Bake in the oven for about 20-30 min at approximately 180°C.

(For the sauce, you can use yogurt blended with a pinch of salt and garlic.)

My version: I blended a glass of cashews and half Brazilian nuts with water until covered, a clove of garlic, a pinch of salt, and cayenne pepper.

Once baked, dip or pour the sauce over the vegetables.
