🥕 caramel carrot base.

I prepared from intuition and feeling.

So the quantity may vary.

🥕 Make sure the consistency of the base is thick, you can shape the base by hand.

CARAMEL CARROT CAKE Base Ingredients:

2-3 carrots,

1 cup pecans,

10-15 pcs. prunes,

10-15 dates,

50 ml of melted coconut oil,

1 tsp ground cinnamon,

0.5 tsp cardamom,

0.5 vanilla pod,

1/4 tsp salt.

CARAMEL CARROT CAKE VANILLA - white layer

500 g of cashew nuts

3-5 tablespoons of honey. To taste!

0.5 vanilla pod,

1 - 2 pieces of lime juice. To taste! And grated peel.

100 ml of melted coconut oil.

CARAMEL CARROT CAKE For decoration: existing or favorite berries, nuts, fruits.

LET'S PREPARE!

  1. Soak dried plums, dates, cashews in hot water in separate containers. We take about 30 minutes.
  2. First, we chop the pecans to the size of millet. Pour into a bowl.
  3. Using a food processor/vegetable slicer with an S-shaped blade, chop the carrots into grains - about the size of millet grains. Pour into a bowl along with the pecans.
  4. also grind the soaked dates and plums with a vegetable chopper or blender. We grind together all the spices, vanilla, salt, honey, oil. We pour the entire resulting solid mass into a bowl of carrots and pecans.
  5. We learned everything very well. We put it in the selected tin. We form the basis. Shape - circle, about 28-30 cm.
  6. Grind the cashews in a blender, adding enough water to cover the nuts, leaving a couple of fingers. Then add honey, vanilla pod, oil, lemon juice and grated peel. Rub until smooth.
  7. We pour the obtained white mass on the formed base.
  8. We put it in the freezer. We keep it for 3-4 hours. After that, it can be stored in the refrigerator.
  9. Before serving the cake, we decorate it with selected berries, fruits, leaves, and nuts.
