This is a fermented-sour drink made from sprouted grains, containing active enzymes and beneficial bacteria that improve digestion and strengthen immunity. Rejuvelac is rich in B vitamins, vitamins C, E, and proteins. It is also used as a natural probiotic, with good bacteria that effectively cleanse the intestines. Suitable for active athletes as an energy drink.
Rejuvelac can be consumed as a drink or used as an ingredient instead of water, in green smoothies or in an energy soup.
Servings: 1.5 l
Ingredients:
2 cups wheat berries 10 cups boiled water (cooled)

Instructions:
Soak wheat in water (4 cups water) for 24 hours.
Drain the water the wheat was soaked in, rinse under running water in a colander. Leave for another 24 hours at room temperature. The wheat will start to sprout, small tails of sprouts should be visible. If the wheat does not sprout within 24 hours, keep it for a few more hours until it sprouts.
Put the sprouted wheat into a food processor or blender and blend until smooth. Transfer the mixture to a clean jar and pour in the remaining water (6 cups). Cover the jar with cheesecloth, you can secure it with a rubber band around the neck for good measure. It is important that oxygen can enter. Leave the jar at room temperature for at least 48 hours. The longer you leave it, the stronger the taste of the drink will be.
Strain the contents of the jar into a clean container and seal tightly. Stored in the refrigerator, rejuvelac has a shelf life of about 2 weeks.
