Lenses are one of the products with the highest plant protein content. Proteins are essential for nourishing muscles and the brain. Therefore, we need to obtain them daily. Plant proteins are particularly beneficial as they do not burden the body and are well tolerated and easily absorbed.

This time I prepared it with green lentils. The dish can be eaten hot or even as a cold salad.

preparation

1 cup of green or black lentils

I soaked them overnight in water. This way, the lentils become even more nutritious, and they only need to be cooked for a very short time, 5-10 minutes. If you leave them for about 8 hours without water, the lentils will start to sprout. This way, you will have sprouted lentils that you can use raw in salads and other dishes.

1 zucchini,

1 eggplant,

2-3 larger tomatoes,

we chop the vegetables and briefly sauté them. we season with a pinch of salt, an Italian herb mix, and a pinch of cayenne.

We mix the vegetables with briefly cooked lentils. We serve it together with slices of fresh tomatoes, young beet greens, and mustard sprouts.
