We all know that protein is a building block for muscles and food for the brain. It is beneficial and essential for everyone. Beets strengthen the blood and provide energy. You can apply the stew recipe differently every time. For example, you can swap lentils with chickpeas, pearl barley, quinoa, green peas, buckwheat, etc. You can also change vegetables every time, as well as the spices. Just more creativity and imagination in the kitchen :)

Ingredients:
0.5 cup lentils (soaked in water overnight. This increases nutritional value and shortens cooking time.)
1 beetroot,
1 carrot,
0.5 tsp salt,
1/4 tsp cayenne pepper,
0.5 tsp coriander,
0.5 tsp cumin,
0.5 tsp curry,
1/4 lemon juice,
Fresh cilantro,
Oil.

Instructions:
Boil lentils for only 2-3 min. Add 2-3 tbsp oil.
Let them swell for 10-15 min.
Grate the beetroot and carrot into thin strips.
Soften them with a pinch of salt and lemon juice.
Lightly warm in a pan for 2-3 min.
If you want the vegetables to be softer, add a splash of water and cook for another 5 min.
Add the spices.

Serve with lentils. Sprinkle with chopped cilantro or other greens, a pinch of white and black sesame seeds.
This is a nutritious vegan dish.
