Signature cherry/blackcurrant cake

Base:
150g almonds;
100g sunflower seeds,
100g soaked prunes,
50g soaked raisins,
50g coconut oil,
a pinch of salt, cinnamon.

Filling:
300g soaked (optional) cashews;
1 cup blackcurrants,
1 cup cherries or strawberries,
3-4 tbsp chia seeds,
150g honey,
a pinch of salt;
150g coconut oil.

Method:
Grind almonds and sunflower seeds (not fully) in a food processor. Mix with prunes, raisins, and coconut oil. Line a baking tin to form the base of the cake, about 1-1.5 cm thick.


Filling

Blend cashews in a blender.
Then add all other remaining ingredients. Only add berries at the very end. Blend briefly so that the blackcurrant seeds and cherry skins remain unground.
Pour the resulting homogeneous mixture onto the cake base and leave in the freezer for 2-3 hours. Then keep it in the refrigerator before serving.
I decorated with chia seeds, chopped almonds, and dried prunes. However, you can decorate with fresh or frozen berries.
