You will need:
0.5 cup almonds,
0.5 cup sunflower seeds,
0.5 cup walnuts,
1.5 cups dates,
2 tbsp honey,
5 tbsp cocoa,
5 tbsp coconut oil (cocoa butter is better!)
0.5 tsp salt,
2 tsp Ceylon cinnamon
0.5-1 tsp cayenne or chili (do not add if preparing for children!)
Finely grind the nuts and sunflower seeds with a food processor using an S-blade or a coffee grinder.
Soak dates in hot water for 30 minutes. Then grind them in a food processor or blender until they reach a jam-like consistency. Melt the coconut oil or cocoa butter.
Combine all ingredients and mix well.
Form into desired shapes: balls, then roll in cocoa.
You can safely store the truffles in the refrigerator for 7-10 days. If they last longer, you can freeze them.
