When it's raining outside, and there are plenty of homegrown tomatoes and fresh, fragrant basil... the family is waiting for something delicious, aromatic, and healthy.
A feast of fantasies begins...
You will need:
Tomatoes, eggplant, bell pepper, chili, beans, garlic, basil, spices.
Let's prepare!
Dice the eggplant, sprinkle with salt. Leave it while you prepare the other vegetables.
Chop the tomatoes, basil, bell pepper, chili, and garlic.
First, briefly sauté the garlic, chili, and spices. Once the eggplant softens, add the bell pepper.
At the very end of cooking, add the beans.
It's delicious if you use red beans (you can use your own cooked or canned).
Garnish with basil when serving.
It's also very tasty to garnish with pine nuts instead of cheese.
