Enoki

Enoki means "winter mushroom" because it grows at 1 or 2 degrees Celsius. Its stem is long and its cap is tiny. Fragile, flower-like, they grow in clusters in China and Japan and can be eaten both raw and cooked. Enoki is the fourth most consumed mushroom in the world!

This soup is extremely gourmet. Although the soup is hot, its nutritional properties are preserved.

To prepare the soup, you will need:

2-3 tbsp miso paste (choose light) which is fermented soy,

0.5 bell pepper

2-3 cherry tomatoes

wakame seaweed

1/4 red onion (briefly marinated with a pinch of salt and lemon)

tofu

1/4 zucchini

0.5 tsp cayenne pepper

Blend the miso paste with hot water and cayenne pepper in a blender/mixer to make about 1 liter. Briefly soak the wakame seaweed in water, it softens quickly. Slice the tomatoes, grate the zucchini into strips, and slice the onion into strips, marinating briefly with a pinch of salt and a dash of lemon.

Place the vegetables in a bowl, pour in the miso broth. Chop the enoki mushrooms and place them on top or mix with other vegetables. Enoki mushrooms are very fragile. I recommend just rinsing them under running water, but not cooking them. This way we will preserve their nutritional properties.
