Italian Sunflower Spread

Very quick to prepare, filling, and delicious. The base of this recipe consists of sunflower seeds, and 50 g of sunflower seeds provides the daily iron requirement. Additionally, the absorption of the seeds is higher when soaked in water.

Number of servings: 4-6

Ingredients:

300 g of sunflower seeds (soaked in water for 6-8 hours)
1 medium carrot
1/4 red bell pepper
5 pcs. sun-dried tomatoes
0.5 kg of salt
1/4 cup of lemon juice
1/4 a. cayenne
1/4 cup black pepper
1 a. m. Italian herb mix

Cooking:

We combine all the ingredients in a food processor with an S-shaped blade. We blend until smooth. The spread can be applied on cucumber, zucchini, or dried bread.

Ingredients:

Sushi Nori sheets
Soy sauce
Wasabi horseradish powder or paste

"For rice":
200 g of chopped cauliflower (flowering cabbage) or white radish
200 g of sunflower seeds
a pinch of salt

For the filling:
1/2 tomato
0.5 cucumber
1/2 carrots
1/2 avocado
2 heads of soaked shiitake mushrooms
lucerne or other sprouts

A splash of marinated red onions with lemon juice and a pinch of salt

Cooking:

We chop the rice ingredients with a food processor using an S-shaped blade. On the Sushi Nori sheet, we sprinkle and spread the rice (it should cover about a quarter of the sheet). We place a line of diced tomatoes, sliced cucumbers and carrots, sliced avocado, and shiitake mushrooms, along with chosen sprouts. I recommend briefly marinating the carrots beforehand: as always, with a pinch of salt and a splash of lemon juice. After adding the filling ingredients, tightly roll the entire sheet into a tube. When rolling, it is necessary to moisten your hands and the Nori sheet with water for better adhesion.
After wrapping, leave for 10-15 minutes, then cut into pieces 2-3 cm in size with a sharp knife.
Served with soy sauce and green horseradish wasabi paste.

All ingredients are not thermally processed!

Ingredients:

100 g of frozen green peas
60 g of carrots
3 cups of lemon juice
50 g of pickled cucumbers
50 g of fresh cucumbers

50 g of zucchini
50 g of leeks
a few green onion leaves
dill sprig
a pinch of salt and black pepper

For mayonnaise:

40 g of cashew nuts
3 l. sunflower oil
1/2 tsp ground mustard
100 ml of water
1-2 cloves of garlic
1 1/2 cups of salt

1/2 cup lemon juice
1/2 tsp turmeric

1/2 a.s warrior

Cooking:

We thaw the peas by rinsing them with warm running water, but not hot. We grate the carrots into straw-like pieces and briefly marinate them with a pinch of salt and a splash of lemon juice. We chop the cucumbers and zucchini into cubes, and finely chop the leeks and onions. We mix all the ingredients and pour over the prepared mayonnaise. We blend the components of the mayonnaise using a food processor or blender.
Before serving, sprinkle with dill and black pepper.

Fantastically delicious, hearty, and nutritious "beetroot salad with plums and vegan mayonnaise"

warning; beets are only raw!
You will need
1-2 beets, depending on the number of eaters,
0.5 cup of dried plums.
No soaking is needed, just wash it well.
0.5 - 1 g of salt,
0.5 a.s cayenne,
1 kg of honey,
0.5 lemon juice,
1/4 cup of walnuts,
A pinch of ground cumin or caraway seeds.
Progress
We are sorting the beets. They are better suited in straws.
We mix with the remaining ingredients, except for the dried plums and walnuts. We let it marinate.
Dried plums are cut into strips.

Vegan MAYONNAISE:
20 g of cashews,
20 g of sunflower seeds,
3 tbsp sunflower oil,
1/2 tbsp of ground mustard,
100ml of water,
1-2 cloves of garlic,
1 1/2 tsp salt,
1/2 lemon juice,
1/2 oz of turmeric.
Blend all the ingredients until you achieve a sauce-like consistency. If it's too thick, add more water.

We mix pickled beets with dried plums and vegan mayonnaise.
When serving, we form a mound and sprinkle with chopped walnuts.

Sweet, colorful, delicious "mini eggs"

INGREDIENTS

0.5 liters of shredded coconut

 100 ml of melted coconut oil

1 tbsp of agave or honey

4 l of warm water

¼ teaspoon of vanilla

a pinch of salt

Natural food colors *

 INSTRUCTION

Use a food processor to chop the coconut flakes until they become fluffy and almost start to thicken. Add all the other ingredients except for the food colors. Divide the mixture into three separate bowls. Add the desired food color to each bowl and mix thoroughly. For easy shaping, the mixture should not stick to your fingers. If it is a bit too soft, add a little more chopped coconut. Shape the colorful eggs to your desired size. Chill in the refrigerator or freezer until set. If desired, decorate with chocolate. You can use the mini eggs to decorate cakes.!!!

NOTES * Natural food colors: red-beet juice.

Pink – mash the cranberries or frozen raspberries.

Orange - juice and pulp of small carrots. Blend with a blender. To enhance the flavor, you can add grated orange peel.

What makes my prepared desserts special?

They are flourless, sugar-free, and not baked. When preparing desserts, the most important thing for me is that they are nutritious, delicious, and quick to make. The cakes are very filling, but after eating a piece, you don't feel heavy, and that is super food.

Eat without guilt!

APRICOT LAYER CAKE

For the cake, you will need a cake pan; we recommend one with easily removable sides for easier removal of the finished cake.

Base:

1 glass of sunflower seeds
1 cup of almonds
1.5 cups of soaked dates in water for 2-3 hours (30 min - 1 hour)
2 tablespoons of cocoa
2-3 tablespoons of coconut oil
A pinch of salt

Middle layer:

2-3 bananas
Lime peel

Top layer:

1.5 cups of dried apricots soaked in water (30 min – 1 hour)
1 cup of soaked raisins

Preparing the base.

With the food processor featuring an S-shaped blade, we grind sunflower seeds and almond nuts, leaving some granules instead of turning them into a smooth paste.

Soaked dates in water are placed in a blender and blended to obtain a date paste. The consistency should be similar to jam. Then, we mix the ground dates with ground nuts and sunflower seeds, add cocoa, melted coconut oil, and a pinch of salt. Everything is mixed well.

We cover the cake mold with this mixture. Middle and top layer: On top, we place sliced bananas and sprinkle with grated lime zest (we only grate the green part, as grating the white part will result in bitterness).

Prepare the top layer. Place the soaked apricots and raisins into a food processor. Blend and spread over the banana layer.

The cake is ready and can be eaten immediately. Or you can briefly put it in the freezer. You can keep such a cake in the refrigerator for up to 2 days.

Cake "MOKA"

No flour, no sugar, unbaked.

You will need:

main:

150 g of almonds,

100 g of sunflower seeds,

150 g of soaked dates,

50 g of coconut oil,

a pinch of salt, cinnamon;

for the filling:

300 g of soaked (not necessarily) cashew nuts,

2 cups of cocoa,

2 cups of ground coffee,

2 a. m. cinnamon,

150 g of honey,

a pinch of salt,

150 g of coconut oil.

Progress

Base. We ground almonds and sunflower seeds (not completely) with the food processor.

We mix with date paste and coconut oil. We line the tray so that it is

approximately 1–1.5 cm thick base for the cake.

Filling. We blend the cashews with water. We add enough water so that

blend until smooth. Melt the coconut oil. Then add the remaining ingredients and blend again.

Pour the obtained mixture over the cake base and leave it in the freezer for 2–3 hours. Sprinkle with cocoa powder. You can decorate with mint leaves, dried

with berries. Keep in the refrigerator.
