Signature white salad with vegan mayonnaise,
especially delicious, nutritious and close to tradition :)
All ingredients are not thermally processed!
Ingredients:
100 g frozen green peas
60 g carrots
3 tbsp. lemon juice
50 g pickled cucumbers
50 g fresh cucumbers
50 g zucchini
50 g leeks
a few spring onions
a sprig of dill
a pinch of salt and black pepper
For the mayonnaise:
40 g cashews
3 tbsp. sunflower oil
1/2 tbsp. ground mustard
100 ml water
1-2 cloves garlic
1 1/2 tsp. salt
1/2 tbsp. lemon juice
1/2 tsp. turmeric
1/2 tsp. curry
Preparation:
Thaw the peas by rinsing them under warm running water, not hot. Grate the carrots into strips and briefly marinate them with a pinch of salt and a dash of lemon juice. Dice the cucumbers and zucchini, finely chop the leeks and onions. Mix all ingredients and pour over the prepared mayonnaise. Grind the mayonnaise ingredients in a food processor-blender.
Before serving, sprinkle with dill and black pepper.
