Beetroot soup with sunflower seed sour cream

This is a true immunity and blood booster. The soup is rich in enzymes, good bacteria, and blood-boosting beets. The combination with sunflower seeds greatly strengthens and improves the synergy. Did you know that 50g of sunflower seeds contain the entire daily iron requirement?:)

And most importantly – no cooking required and quick to prepare :)

Preparation:

Serves approximately 3 people.

1 beetroot,

1.5 cups of sauerkraut,

1 tbsp miso paste (fermented soy, I usually use light, with less salt) or 2-3 tbsp soy sauce,

1 clove of garlic,

1/4 tsp cayenne, black pepper, and caraway to taste,

Sunflower sour cream - topping,

100 g - approximately half of a 200 ml glass

0.5 tsp salt,

0.5 lemon juice,

1 clove of garlic,

A pinch of black pepper,

Place in a blender/food processor, add water until covered. Blend until smooth.

Preparing the soup;

Cut the beetroot into wedges,

Blend with 0.5 cups of sauerkraut and other spices (see the first list of ingredients), adding hot – almost boiling – water while blending until the ingredients are covered, and 2-3 tbsp of oil. You can use nut oil or another oil... but cold-pressed is best and healthiest :)

If the soup seems too cold, you can warm it up. Just don't boil it. To preserve more nutrients.

Taste it. If it lacks flavor, saltiness, spiciness, or is too thick - you can always adjust it to your liking :)

When serving - add a spoonful of sunflower sour cream, you can garnish with chopped dill, parsley.
