Ingredients:
- 1 young zucchini
- a pinch of salt
- a drizzle of olive oil
- Italian herb mix
- homemade tomato sauce
Method:
Peel the zucchini. Using a grater with a julienne blade, grate until you reach the center of the zucchini where the seeds are.
Before serving, soften the obtained "pasta" with a few grains of salt and a drizzle of oil, sprinkle with Italian herbs (basil, marjoram, oregano).
Season with homemade tomato sauce.

Here are two recipes for homemade tomato sauce: one spicier with garlic, and the other perhaps more exotic and sweeter - with dates and sun-dried tomatoes. Both are made very quickly, and their nutritional value is incomparable to store-bought sauces! Let's not delay and cook ;)

- 2-3 tomatoes
- 2-3 cloves of garlic (to taste)
- a slice of onion
- a pinch of salt
- 1/4 tsp black pepper
- basil (if fresh - a sprig, if dried - 1 tsp)
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp honey
Preparation:
In a blender or food processor, blend the tomatoes with a few cloves of garlic (to taste), add a slice of onion, a pinch of salt and black pepper, a sprig of basil, honey, a squeeze of lemon juice, and make sure to add a couple of tablespoons of olive oil. If you want a thicker sauce - add ground almonds or pine nuts. The proportions of all ingredients can be adjusted to your taste.

Servings: 300 ml

Ingredients:
2-3 tomatoes
5-8 dried tomato halves
4-5 dates (preferably soaked in water for 30 min beforehand)
1/4 tsp salt
basil (if fresh - a sprig, if dried - 1 tsp) or Italian herb mix
2 tbsp olive oil
3 tbsp beetroot juice (optional)
Preparation:
Cut the tomatoes into quarters, place them in a blender along with the dried tomatoes, dates, pour in the olive oil, don't forget the basil and salt (to taste). Blend everything well until you get a smooth tomato sauce consistency.
