More vegetables. Gourmet style...

A light, quick, delicious dish or a gourmet side.

As you can see, I cut them into large pieces:

  • sweet potato,
  • zucchini,
  • bell pepper,
  • onions,
  • cauliflower.

Spices: Italian herbs – basil, oregano, marjoram, chili or cayenne, salt. I didn't add salt, as the vegetables would become too soft. I drizzled them with oil.

Bake in the oven for about half an hour or less. Can be eaten with pickled cucumbers or fresh vegetable salad. Also great with lentils.

You can also bake vegetables as shown in the other photo. Here I baked bell pepper, tomatoes, carrots, cauliflower, mushrooms, broccoli.

Serve with your chosen dressing: homemade tomato sauce or a nutty-garlic one.
