Healthy, tasty, nutritious.
Ingredients:
- Sushi Nori sheets
- Soy sauce
- Wasabi horseradish powder or paste
For the "rice":
- 200 g finely chopped cauliflower or white radish
- 200 g sunflower seeds
- a pinch of salt
For the filling:
- 1/2 tomato
- 0.5 cucumber
- 1/2 carrot
- 1/2 avocado
- 2 soaked shiitake mushroom caps
- Alfalfa or other sprouts
- Pickled red onions with a splash of lemon juice and a pinch of salt

Preparation:
Finely chop the "rice" ingredients using a food processor with an S-blade. Spread the "rice" on a Sushi Nori sheet (it should cover about a quarter of the sheet). Place strips of tomato, sliced cucumbers and carrots, strips of avocado and shiitake mushrooms, and your chosen sprouts in a single line at the top. I recommend briefly marinating the carrots beforehand: as always, with a pinch of salt and a splash of lemon juice. Once the filling ingredients are arranged, tightly roll the entire sheet into a cylinder. When rolling, you should moisten your hands and the Nori sheet with water so that it sticks together better.
After rolling, let it rest for 10-15 minutes, then cut into 2-3 cm pieces with a sharp knife.
Serve with soy sauce and green horseradish paste (wasabi).
