"Zucchini with walnut pesto"

 

Zucchini is a source of vitamins, minerals, and other beneficial substances. They can help you lose a few unwanted kilograms and overcome some health problems. They are beneficial for children's growth and development, and for adults, they can help maintain a healthy heart, joints, kidneys, and other vital organs.
 
The most beneficial property of zucchini is to regulate the body's water balance. Zucchini helps remove excess salts from the body and has a diuretic effect. It is also suitable for dietary nutrition: you can safely eat up to 1.5 kg of this beneficial vegetable per day without worrying about unwanted weight.

A warm or hot vegan dish.

1-2 zucchinis (out of season, you can substitute zucchini with pumpkin or marrow).
Cut the zucchini or other chosen vegetable into strips lengthwise, sprinkle with walnut pesto, and bake in the oven for 15 minutes (250 degrees).

How to make walnut pesto?

You can substitute nuts with pumpkin or sunflower seeds.

Preparation
Grind 1/4 cup of walnuts in a coffee grinder or blender,
mix with 1.5 tsp. curry, 1/4 tsp. cayenne, 0.5 tsp. salt, 0.5 tsp. coriander, add a dash of soy sauce.

FENNEL

Known as a healing vegetable. Its seeds have the strongest medicinal properties. But fennel bulbs are also very valuable for their nutritional properties, vitamin C, folic acid, potassium, calcium, and iron. 

"Fennel Salad"

Preparation:

Grate 1 fennel bulb into thin strips.

Make the dressing:
0.5 tsp salt,
juice of 0.5 lemon,
0.5 tsp honey.
Sprinkle with cranberries or lingonberries.
