Almond - Orange Cake
I love to experiment. It's like food alchemy. This time, an unexpectedly created cake for the family on Easter was well received.
Like all other dishes, this one was created with healthy eating principles in mind. No white sugar, no wheat flour, yeast, or dairy products.

I hope you like this recipe and it suits any occasion, or none at all :) Enjoy.
Preparation:
300g Almond flour
100g Coconut flour (but you can mix it half-and-half with uncooked buckwheat flour and sunflower seed flour). How to prepare flour? Simply grind it in a coffee grinder.
2 oranges
250 ml coconut yogurt (you can use kefir, buttermilk if you consume dairy products)
4 tsp baking powder
100 ml coconut oil
3 tbsp coconut nectar sugar (does not acidify the body)
3 tsp cinnamon
1 tsp salt
Instructions:
I started with the oranges. Washed them with soap and soaked them in a baking soda solution.
Then I ground the almonds. Mixed them with coconut flour.
Stirred the baking powder into the coconut yogurt (kefir or buttermilk).
Zested the orange and squeezed the juice. Poured it into the coconut yogurt with baking powder (kefir or buttermilk) and poured this entire mixture into the nut flour. Mixed well. Additionally, I added sugar, salt, and cinnamon.
At the same time, I melted the coconut oil over low heat and poured it into the mixture. Mixed well.
ATTENTION: since I developed the recipe in the process, there may be inaccuracies. If you see that the mixture is too thick, add more orange juice and coconut yogurt (kefir or buttermilk). The consistency should be thick, but still pourable.

I chose a round 23 cm form. Greased it with coconut oil, sprinkled with coconut flour. Poured in the prepared mixture, decorated with pecan nuts.

Baked for about an hour. First, about 15 min at 250 degrees. Then reduced to 200 degrees for about 10-15 min. And finished baking at about 160 degrees. I watched to make sure it didn't burn. Since the mixture is quite moist, when it finished baking, I still left it to dry in the oven for about 30 min. and only then served it for tasting :)
Additionally, I mashed a banana with frozen strawberries and blueberries. Although it was delicious on its own :)
