I confess – I haven't liked millet since childhood. When I prepared it according to this recipe, I rediscovered it. The dish is suitable not only for lunch, but also for dinner and breakfast. Try it yourself!

• It is rich in protein, copper, manganese, zinc, and starch, contains some fat and fiber, and is particularly high in potassium, phosphorus, and magnesium. Due to its significantly higher concentration of potassium salts compared to other groats, loose millet porridge is recommended for people suffering from cardiovascular diseases and atherosclerosis.

• Millet contains a lot of starch, so it needs to be soaked – then even people with excess weight can eat these groats. Millet groats contain very little gluten, so they are easily digestible.

Preparation:

  • 1/2 cup millet groats,
  • 2–3 plum tomatoes,
  • 1/4 orange bell pepper,
  • 1 spring onion,
  • 3–4 sweet pea pods,
  • 1/4 tsp. salt,
  • 2 tbsp. cold-pressed olive oil,
  • 1/4 tsp. ground black pepper.

Instructions:

Soak the millet groats in cold water overnight. Add the soaked groats to boiling water. Cook for 5–10 min. Add the chopped vegetables and spices and leave for another 10 min. This way the vegetables will be pleasantly hot but not overcooked. Serve sprinkled with black pepper and drizzled with olive oil.
