🥕Carrot Caramel Vanilla Cake 
I prepared it based on intuition and feeling.
So the quantity may vary.
🥕Caramel carrot base.
Base Ingredients:
- 2-3 carrots,
- 1 cup pecans,
- 10-15 pcs. dried plums,
- 10-15 pcs. dates,
- 50 ml melted coconut oil,
- 1 tsp ground cinnamon,
- 0.5 tsp cardamom,
- 0.5 vanilla bean,
- 1/4 tsp salt.
VANILLA - white layer
- 500 g cashews
- 3-5 tbsp honey. To taste!
- 0.5 vanilla bean,
- 1-2 pcs. lime juice. To taste! And grated zest.
- 100 ml melted coconut oil.
For decoration: berries, nuts, fruits you have or like.

️ PREPARE!
- Soak dried plums, dates, and cashews in hot water, in separate bowls. Leave for about 30 minutes.
- First, chop the pecans to the size of millet grains. Pour into a bowl.
- Using a food processor/vegetable chopper with an S-shaped blade, chop the carrots into grains - approximately the size of millet. Pour into the bowl with the pecans.
- Soaked dates and plums should also be ground in a vegetable chopper or blender. Grind all spices, vanilla, salt, honey, and oil together. Pour the resulting homogeneous mixture into the carrot and pecan bowl.
- Knead everything very well. Place in the chosen pan. Form the base. The shape is a circle, approx. 28-30 cm.
- Grind cashews in a blender, pouring just enough water to cover the nuts by a couple of fingers. Then add honey, vanilla bean, oil, lemon juice, and grated zest. Blend until a smooth consistency is achieved.
- Pour the resulting white mixture onto the formed base.
- Place in the freezer. Keep for 3-4 hours. After that, it can be stored in the refrigerator.
- Before serving the cake, decorate with chosen berries, fruits, leaves, nuts.
