The cultivated carrot originated from wild carrots and is the oldest known root vegetable, having been grown for at least 3,000 years, if not more. The medicinal properties of wild carrots were well-known to the ancient Greeks, who considered them a sacred plant. 

• The more women consume these vegetables, the less likely they are to suffer from ovarian cancer. Additionally, carrots are beneficial during menopause.
• Carrot extracts may help inhibit the proliferation of colon cancer cells.
• Carrots, especially their juice, are beneficial for weakened immunity and in treating skin conditions.
• Carrots contain substances essential for maintaining good vision. Therefore, they are recommended for myopia, blepharitis, night blindness, and styes on the eyelids. It is advisable to consume carrots or their juice on an empty stomach before breakfast to ensure their beneficial effects on the eyes throughout the day.

KOREAN-STYLE CARROTS

PREPARATION:

  • 2-3 carrots
  • 0.5 lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander seeds
  • 0.5 tsp salt
  • 1/2 tsp cayenne (chilli)
  • 2 cloves garlic
  • a sprig of parsley or coriander for garnish
  • 1 avocado

PROCESS:

  • Grate the carrots using your preferred grater (coarse or julienne)
  • Mash with salt and lemon. Add the other spices. Taste.
  • Season to your liking. I've shared a recipe that works for me and my family :)
  • By the way, I also add a little almond oil.
  • I put the prepared carrots into avocados, and we eat everything together like that.
