ZUCCHINI SPAGHETTI WITH HOMEMADE TOMATO SAUCE

Ingredients:
1 young zucchini
a pinch of salt
a drizzle of olive oil
a mixture of Italian herbs

Making:
We shave the zucchini. With a grater, after choosing blades for straws, we grate to the middle of the zucchini, where the seeds are.
Before serving, soften the resulting pasta with a few grains of salt and a little oil, sprinkle with Italian herbs (basil, marjoram, oregano).

Homemade tomato sauce will suit both the regular and the green table. We present two recipes for homemade tomato sauce: one is more savory with garlic, and the other is maybe a bit more exotic and sweet - with dates and sun-dried tomatoes. Both are very quick to make and nutritionally incomparable to store-bought sauces! Let's not delay and cook ;)
Number of servings: 200 ml
Cooking time: 7 min
Ingredients:
2-3 tomatoes
2-3 cloves of garlic (according to taste)
a slice of onion
a pinch of salt
1/4 century sh. black pepper
basil (if fresh - a sprig, if dried - 1 tablespoon)
1 year sh. lemon juice
2 v. sh. olive oil
1st century sh. honey
Making:
In a blender or food chopper, we grind the tomatoes together with a few cloves of garlic (according to taste), add a slice of onion, a pinch of salt and black pepper, a sprig of basil, honey, add a drop of lemon juice and, of course, a few spoons of olive oil. If you want an even thicker sauce, add ground almonds or pine nuts. The proportions of all ingredients can be adjusted according to your taste.
The second option
Number of servings: 300 ml
Cooking time: 7 min
Ingredients:
2-3 tomatoes
5-8 slices of dried tomatoes
4-5 dates (preferably soaked in water for 30 minutes)
1/4 century sh. salt
basil (if fresh - a sprig, if dried - 1 tbsp) or a mixture of Italian herbs
2 v. sh. olive oil
3 years sh. beet juice (optional)
Making:
We cut the tomatoes into quarters, put tomatoes, dried tomatoes, dates in a blender, pour olive oil, don't forget basil and salt (to taste). We grind everything well until a smooth mass of tomato sauce.
