This is my excellent winter recipe, designed for healthier eating. It will help strengthen blood, immunity, and keep you feeling full.
Everyone will love it :)

Warning: beets must be raw!


You will need:
1-2 beets, depending on the number of eaters,
0.5 cup dried plums.
No need to soak, just wash thoroughly.
0.5 -1 tsp salt,
0.5 tsp cayenne,
1 tsp honey,
0.5 lemon juice,
1/4 cup walnuts,
A pinch of ground cumin or caraway.


Instructions:
Grate the beets. Straws are preferred.
Mix with the remaining ingredients. Except for the dried plums and walnuts. Leave to marinate.
Cut the dried plums into strips.

Vegan MAYONNAISE:
20 g cashew nuts,
20 g sunflower seeds,
3 tbsp sunflower oil,
1/2 tbsp ground mustard,
100ml water,
1-2 cloves garlic,
1 1/2 tsp salt,
1/2 lemon juice,
1/2 tsp turmeric.
Blend all ingredients until a sauce consistency is reached. If too thick, add more water.

Mix the marinated beets with the dried plums and vegan mayonnaise.
When serving, form a mound and sprinkle with chopped walnuts.
