our gardens are already full of real zucchini :) What makes this vegetable unique?
It is one of the few vegetables that has the ability to remove heavy metals from the body.
What makes shiitake mushrooms unique? Not only do they have a subtle, gourmet nutty taste, but they are also believed to have immune-boosting properties.
A great combination :)
Preparation:
Grate the zucchini into thin strips.
For the shiitake dressing:
There are fresh shiitake mushrooms. It is better to use them roasted or lightly boiled. However, I prefer dried mushrooms, especially since dried shiitake mushrooms can be consumed without heat treatment.
Soak the dried mushrooms for approximately 3-12 hours, if possible. Cut them into strips.
Then pour organic, gluten-free soy dressing over them. Season with chopped/crushed garlic, add 3-4 tablespoons of sesame oil. Season with a pinch of cayenne. That's it.
Pour over the zucchini. Can be eaten alone, with rice, or bulgur wheat. Serve as a salad, appetizer, or side dish.
By the way, you can keep the dressing in the refrigerator for up to a week in a tightly sealed jar.
