When you want something warm and healthy. "zucchini with walnut pesto"
Zucchini is a source of vitamins, minerals and other useful substances. They can help you lose a couple of unnecessary kilos and overcome some health problems. They are also useful for the growth and development of children, and for adults they help maintain a healthy heart, joints, kidneys and other important organs.
The most useful property of zucchini is to adjust the water balance in the body. Zucchini helps to remove excess salts from the body, has a diuretic effect. It is also suitable for a diet: you can eat up to 1.5 kg of this useful vegetable per day without fear of unnecessary weight gain.
A warm/hot vegan dish,
1-2 zucchini (out of season, you can replace zucchini with pumpkin, cucumber).
cut lengthwise into strips, sprinkle with walnut pesto and put in the oven at 250 degrees for 15 minutes.
Walnut Pesto:
you can change the nuts. you can use seeds; pumpkin, sunflower.
we are preparing;
1/4 glass of walnuts ground in a coffee grinder or with a cocktail shaker,
mix with 1.5 tbsp. curry, 1/4 tsp. cayenne, 0.5 tsp. salt, 0.5 tbsp. coriander dash of soy sauce (optional)
"Fennel Salad"
1 fennel root,
grate with a cutter into thin strips.
We mix the sauce from:
0.5 tsp of salt,
0.5 lemon juice,
0.5 tbsp of honey.
Sprinkle with cranberries or lingonberries.
FENNEL
– known as a healing vegetable. Its seeds have the strongest healing properties. But fennel bulbs are also very valuable in terms of nutritional properties, vitamin C, folic acid, potassium and calcium and iron.
