Enoki
Enoki means "winter mushroom" because it grows at 1 or 2 degrees. Their stem is long and the cap is small. Fragile, similar to flowers, they grow in bushes in China and Japan and can be eaten both raw and cooked. Enoki is the fourth most consumed mushroom in the world!
this soup is extremely gourmet. Although the soup is hot, the nutritional properties are preserved in it.
You will need to prepare the soup
2-3 tablespoons of miso paste (choose light) this is fermented soy,
0.5 peppers
2-3 cherry tomatoes
wakame seaweed
1/4 onion (for short marinating with a pinch of salt and lemon)
tofu
1/4 zucchini
0.5 as cayenne
Beat the miso paste in a blender/cocktail with hot water and cayenne for about 1 liter. Soak the Wakame seaweed in water for a short time, it softens quickly. Cut the tomatoes, grate the zucchini into strips, onion into strips and marinate for a while with a pinch of salt and a squeeze of lemon.
We put the vegetables in a bowl, pour miso broth. Enoki mushrooms are chopped and placed on top or mixed with other vegetables. Enoki mushrooms are extremely fragile. I recommend only washing them under running water, but do not heat treat them. This will preserve their nutritional properties.
