"Banana and corn pancakes with aquafaba" - AMAZING PANCAKES!
You haven't made pancakes like this yet :) And they turned out fluffy, delicious, rich and nutritious..
The question immediately arose - what is aquafaba? This chickpea liquid is whipped until fluffy and resembles "cream". I mixed it with mashed bananas, a few spoons of cornmeal and baked!.
Pancakes prepared in this way are suitable not only for vegans... not only for vegetarians or those intolerant to dairy products, gluten, etc.. but for everyone who wants to give up and replace wheat flour, eggs, dairy products from time to time, or maybe more often... Suitable for those who exercise!

To prepare 15-18 pcs. pancakes will be needed;
1 can of chickpea liquid or boiled chickpea liquid - about 100 ml. (since they boil for a very long time, and if you want to cook pancakes very quickly, then canned chickpeas are the way out) And prepare HUMUS from the chickpeas!
4-5 pcs. ripe bananas
4-5 tablespoons of corn flour (if it is too runny, add more)
Beat the chickpea liquid until stiff foam - "cream" consistency. The resulting mass is called aquafaba.
While the "cream" - aquafaba is being whipped, mash the bananas in a blender-cocktail until smooth. A pinch of real vanilla beans or a piece of vanilla pod can be added while whipping.
Then lightly mix the prepared aquafaba into the mashed bananas.
We pour corn flour into the resulting mass. You can sift the cornmeal before baking to make it fluffier.
and mix easily with a whisk. In this way, the flour does not jump into lumps.
that's all. We fry in a pan on oil or on special. in a pancake pan.
