Tortilla with avocado sauce and vegetables
Very easy to prepare. A healthy and warm meal for the whole family :)
We use tortilla. It can be purchased ready-made, but you can make your own; From chickpea flour, we additionally add nuts (for example, almonds, which you have after squeezing almond milk), I like to additionally add ground pumpkin seeds, which are extremely nutritious and so little used. We also add ground pumpkin and 2-3 tablespoons of oil, a pinch of salt, and a splash of water. The mass should be a rolling dough. Then we form and roll thin pancakes-tortillas. Fry quickly in a dry pan. Do not overcook, as it will still be heated/baked in the oven.
Avocado sauce
1-2 pieces of avocado
1 onion
1 green or yellow bell pepper
1 pod of chili or 0.5 tbsp of chili or cayenne powder
0.5-1 tsp salt (to taste)
0.5 ctyrina juice
1 tablespoon of honey
We put all the components in a blender and grind.
For the vegetable layer
2-3 tomatoes
2 peppers red and yellow
1 onion (cut, marinated for a short time with a pinch of salt and a splash of lemon juice)
0.5 zucchini
cut all the ingredients into cubes, grate the zucchini. Combine together with the onion. You can additionally add Italian herbs, spices, salt, oil.
Fry the tortilla in the oven. Immediately spread avocado sauce on hot, add arugula and prepared vegetables. If necessary, you can additionally use hard cheese.
