Suitable for everyone, not just those with lactose intolerance. Many say it's much tastier than the traditional one. You can eat it plain or with oven-baked potatoes or sweet potatoes :)

Ingredients:

1 small green beetroot (leaves can also be used)
1-2 cucumbers
a bunch of dill
2 spring onions
a bunch of dill
juice of half a lemon

0.5 l water
0.5 tsp salt
a pinch of black pepper

Preparation:

Grate the beetroot and briefly "marinate" it with a pinch of salt, lemon juice, and honey to soften it. If you want thicker and heartier cold borscht, blend the water with a pinch of cashew nuts, a pinch of salt, and a splash of lemon – it will resemble kefir.
Pour the prepared water-kefir into a bowl or plate (you can chill it in the refrigerator beforehand), add the "marinated" beetroots, chopped cucumbers, spring onions, dill, top with sunflower seed "sour cream," and sprinkle with coarsely ground black pepper.

Sunflower seed "sour cream"

0.5 cup sunflower seeds (preferably soaked for at least 2 hours)

a splash of lemon juice and salt to taste, a pinch of black pepper.

water to cover

Blend until it reaches a sour cream consistency.

You can also use this sour cream as a spread. Sunflower sour cream is easily digestible and its nutrients are exceptionally well absorbed. Sunflower seeds are unique in their nutritional value. They contain a very high amount of magnesium. 50g of sunflower seeds contain the daily iron allowance! Which is especially beneficial for our blood and thus for strengthening the immune system.
