Lentils are one of the products with the most vegetable protein. Proteins are necessary for muscles and brain nutrition. So we have to get them daily. Plant proteins are extremely useful in that they do not burden the body and are well tolerated and easily absorbed.

This time I prepared it from green lentils. the dish can be eaten hot or even as a cold salad.

preparation

1 cup of green or black lentils

I soaked it overnight in water. in this way, the lentils become even more nutritious, and they only need to be cooked for a very short time, 5-10 minutes. If you leave it for another 8 hrs. only without water - the lentils will start to sprout. In this way, you will have sprouted lentils that you can use raw in preparing salads and other dishes.

1 zucchini,

1 eggplant,

2-3 larger tomatoes,

cut the vegetables and fry them briefly. season with a pinch of salt, a mixture of Italian herbs and a pinch of cayenne.

mix vegetables with briefly cooked lentils. We serve together with slices of fresh tomatoes, young beetroot leaves and mustard sprouts.
