Soup. Beetroot with sunflower cream. Enzymes.

This type of soup is a real boon for health not only when sick or after an illness. However, it is a real immunity and blood booster. The soup is full of enzymes, good bacteria and blood-strengthening beets. Connection with sunflowers - extremely strengthens, improves synergy. Do you know that 50g of sunflower seeds have a daily allowance of iron :)

And what's most important - you don't need to cook and it's quick to prepare :)

We are preparing;

Quantity - about 3 diners.

1 beet,

1.5 cups of sauerkraut,

1 tablespoon of miso paste (germinated soy, I usually use light, with less salt) or 2-3 tablespoons of soy sauce,

1 clove of garlic,

1/4 tsp cayenne, black pepper and cumin to taste,

Sunflower sour cream - dressing,

100 g - about half of a 200 ml glass

0.5 tsp of salt,

0.5 lemon juice,

1 clove of garlic,

pinch of black pepper

After putting it in a blender/grinder, add water until it is covered. to grind

We prepare the soup;

cut the beetroot into slices,

ground with 0.5 cups of sauerkraut and other spices (see the first composition), with additional rubbing we pour hot-almost-boiling water to cover the components and 2-3 tbsp. oil. You can use nuts or other.. but cold pressed is the best and healthiest :)

If the soup is too cold for you, you can heat it up. Just don't cook. To preserve more nutrients.

Taste it. If it lacks taste, saltiness, spiciness or is too thick - you can always adjust according to yourself :)

When serving, we add a spoonful of sunflower sour cream, you can flavor it with chopped dill and parsley.
