Even when trying to stick to a healthy diet, we sometimes want to indulge in sweets, which are said to be unhealthy food. For sweet lovers, there are ways to make a healthier treat for yourself and your family. 

Base:

  • 150g almonds;
  • 100 g of sunflower seeds,
  • 150 g of soaked dates,
  • 50 g of coconut oil,
  • a pinch of salt, cinnamon.

Filling:

  • 300 g of soaked (not necessarily) cashews,
  • 1 glass of strawberries,
  • 0.5 cup of blueberries
  • 0.5-1 cup of honey (to taste and based on the sweetness of the berries)
  • 3-4 tbsp chia seeds,
  • a pinch of salt,
  • 150 g of melted coconut oil

Progress:
Grind the almonds and sunflower seeds (not completely) with a food processor. Mix with date paste,
(derived from blended soaked dates). Line the chosen cake mold with it.

Approximately 1-1.5 cm thick.

FillingBlend the cashews with 0.5-1 cup of water. Pour in half a cup at a time. It should result in a smooth mixture. It greatly depends on the freshness, drying, and quality of the nuts.
Then add all the other remaining products. Only the berries at the very end. Grind briefly so that the seeds remain unground.
Pour the obtained homogeneous mass over the cake base and leave it in the freezer for 2-3 hours. Then keep it in the refrigerator just before serving.
I decorated with blueberries and strawberries.
